refactor(boss-dashboard): simplify rep card to loaded/claimed/orders

Drop the separate quotesLoaded metric and relabel quotesDoneFor as
"loaded" and quotesDoneBy as "claimed" — two near-duplicate numbers
per rep card was more confusing than useful.
