Dave e51a405414 feat(quotes): enhance quote creation with new fields and error handling 
Added support for additional fields in the quote creation process, including quote_number, rfq_number, quote_notes, and status. Updated the error handling to return a specific 409 response when a quote_number conflict occurs, improving the API's feedback for clients. Enhanced documentation to reflect these changes.
