Dave 80a08a742b feat(mcp): enhance API documentation and add new tools 
- Updated `docs/api-mcp-layer.md` to reflect the current state of the API, including new endpoints and tools.
- Added `category` field to `QUOTE_ITEM_PATCH_FIELDS` and `ORDER_ITEM_PATCH_FIELDS` to support item categorization.
- Introduced 22 new MCP tools to cover previously missing REST functionalities, increasing the total tool count from 103 to 125.
- Improved descriptions for several existing tools to clarify their usage and parameters.
- Regenerated the API documentation to ensure accuracy and completeness.
